What is your favorite thing to eat and drink?

My favorite thing to eat is breakfast food, eggs and such, corned beef hash. Although I rarely eat it. I’m also fond of a room temperature Guinness and a neat Jim Beam.

What are you most proud of about Veritas?

I’m proud of helping to build a restaurant culture that draws people to it. I like that people want to work here.

How did you get started in the restaurant industry? 

When I was 13, my dad told me that if I wanted more spending money, I had to earn it. There was a Lebanese restaurant right down the street from our house.I walked in and took a job as a dishwasher and prep cook. All uphill from there.

What is something unique about you that not many people know? 

I am extraordinarily not unique. That is unique in and of itself.

What is your favorite season for food specials and why?

I love winter because I like making comfort food. Also, because I'm from Marquette and winter always reminds me of home.

What is your favorite thing to eat and drink?

I'm always a fan of rustic homestyle dishes. Fresh protein and vegetables combined with robust sauces and herbs are always a quick way to my heart. I enjoy craft cocktails of all varieties, however I definitely gravitate toward gin.


What are you most proud of about Veritas?

I am always proud of our teamwork and comradery. This is especially true behind the bar where we all really need to communicate and work together to produce nothing but the best for our guests and each other.


How did you get started in the restaurant industry?

Like many young adults, I started at a fast food chain. I then moved to a couple family-style restaurants before graduating to Food Dance in Kalamazoo. There I got my first taste of exceptional food and drink and was able to see how a restaurant flows when people work selflessly. From there I was lucky enough to find Veritas where I continue to work with high quality food and drink and get to flex my creativity behind the bar.


What's something unique about you that not many people know?

I have a degree in music composition from WMU. Music has always been a passion and in my free time I compose and arrange music to play alone, with friends, and for marching ensembles.


What is your favorite season for food specials and why?

Summer is always my favorite time of year for food. My favorite thing specifically is the plethora of fresh vegetables that crop up. Nothing makes food stand out more than when you are using the freshest of ingredients.

Beef Carnitas and Modelo


What are you most proud of about Veritas?

I'm proud of each and every plate I serve. 


How did you get started in the restaurant industry? 

I started as a dishwasher at Vera Mae's in Muncie, Indiana in 2019.


What is something unique about you that not many people know? 

I'm nearly 80% color blind. 


What is your favorite season for food specials and why?

Autumn because farm fresh and locally grown foods remind me of home.

What are you most proud of about Veritas?

The quality of food we serve on a day to day basis.

How did you get started in the restaurant industry?

As a dishwasher at 16.

What is something unique about you that not many people know?

I'm double-jointed in both of my pinkies.

What is your favorite season for food specials and why?

Fall because of the vegetable and poultry that are in season.

What is your favorite thing to eat and drink?

My favorite dish on our menu is the Beer Dill Lemon Walleye; it pairs well with one of my favorite wines, Chardonnay Sonoma Cutrer.

What are you most proud of about Veritas?

It's so hard to choose, I would have to say the atmosphere. When you walk through a full dining room and see nothing but smiles and people laughing at every table you see.

How did you get started in the restaurant industry? 

I started my restaurant career as a dishwasher. I've been washing dishes for about 8 years now, but I finally realised the money is in the front of the house. So I became a server and it's been about 4 years now and I absolutely love it. Now Veritas has given me the opportunity to become a manager, I can't wait to see what my future holds.

What is something unique about you that not many people know? 

I probably shouldn't say this but, I would honestly do my job for free. I love it and I can truly say that, I look forward to coming to work everyday. Veritas is my second family. 

What is your favorite season for food specials and why? 

My favorite season is just fall and winter. It's the holiday season. Holidays remind me of family, so I always think of family dishes and just spending time with them.

WESLEY WHITMAN

What is your favorite thing to eat and drink?
My favorite item on the menu has to be the Brazilian Picanha due to how unique it is to see on menus in America and it pairs well with my favorite drink a cold Lager.


What are you most proud of about Veritas?

The thing I'm the most proud of at Veritas has to be the growth I've seen from our staff through the ups and downs of the last year and how passionate we are about this Restaurant.


How did you get started in the restaurant industry?

I started in the industry at 15 as a host in a  small sushi restaurant and I haven't looked back since. 


What is something unique about you that not many people know? 

One unique thing to note about me is that when I'm not at work im an avid golfer and I work on a D&D Podcast


What is your favorite season for food specials and why? 

My favorite season for food and drink specials is spring. I love the abundance of fresh fruit and herbs you can use for infusion and tinctures as well as sauces
